Recipe: Basil Beef Bowl with Quinoa Stir-Fry

I have to say cooking this dish was WAY out of my comfort level, but it really was so easy and it was SO good. I can’t wait to make it again. This is a dish that my husband loved as well, which I wasn’t sure if he would since it was so different from what we normally eat. If it’s outside of your comfort level, I recommend trying it, because it’s really super easy!

2/3 cup of quinoa
1/2 cup of peas (frozen and thawed are fine)
10-12 oz of flank steak
2 scallions (green onions), sliced
a handful of thai basil, cut into strips
2-3 carrots, cut into thin slices
1 small yellow onion, diced
1 lime, cut into wedges
2 cloves of garlic, minced
2 tablespoons of vegetable/canola oil
1 cup of water
salt & pepper
1 teaspoon of honey
2 teaspoons of soy sauce- divided
2 teaspoons of Sriracha – divided

First thing I do is cut up everything and place it on my board next to wear I will be cooking. This makes cooking so much easier!

Now you will need to cook your quinoa. Place 1 cup of water and a pinch of salt in a pan with quinoa, bring to boil, reduce heat low to simmer. Cook for approximately 10 minutes until water has evaporated and quinoa is tender. Remove from heat, cover, and set to the side.

Next, slice your beef very very thin, against the grain. It should be in strips. Place the beef in a medium bowl with 1/2 of your lime (juice it into the bowl), minced garlic, 1 teaspoon of soy sauce, 1 teaspoon of Sriracha, and 1 teaspoon of honey. Marinate for at least 10 minutes or up to 3 hours. 10 minutes really is enough since the beef is really thin.

Heat 1 tablespoon of oil in a medium skillet over medium heat. After a few minutes add in carrot and onion. Saute until the onions are translucent, about 5-8 minutes. Add in the peas and saute just until warmed through, about 3 minutes. Stir in your cooked quinoa, 1 teaspoon of soy sauce, 1 teaspoon of Sriracha, cook together until all is combined. Put in a separate bowl and set aside.

Take your clean skillet and add 1 tablespoon of oil over high heat. Let the oil heat up. Add beef, but reserve any marinade in the bowl. Cook the beef until just cooked through which will be about 1 minute per side. Reduce the heat to medium and add in your Thai Basil and your marinade that was leftover. Cook for another minute.

Next you are going to plate your food, this is enough for 2 large servings. Divide the quinoa/stir-fry between 2 bowls, add your beef on top and spoon your sauce over top. Garnish with some lime wedges and green onions. Then Serve!

WWE Community Outreach Programs – #Sponsored

This post is sponsored by WWE. All thoughts and opinions are those of my own and may different from yours.

We all know how important it is to give back to our community and volunteer. Unfortunately, not a lot of us do it, or feel we have the time to do it. Our lives are busy, but it’s really important to help out in the community and take time out to do so. That’s what I love about the WWE Community. They have so many wonderful programs and foundations that they support to positively impact children and families.

WWE is committed to leveraging the power of its brand and platforms to help address important social issues worldwide including diversity and inclusion, education, military support and providing hope to those in need. Through partnerships with Ad Council, GLAAD, Hire Heroes USA, Make-A-Wish, Pearson Foundation, Special Olympics Connecticut, Susan G. Komen for the Cure, The Creative Coalition and USO, WWE supports programs and initiatives that positively impact children and families around the world.

One of my favorite programs is Rise Above Cancer to support the Susan G. Komen foundation. This program is near and dear to me as my Grandmother is a survivor of breast cancer and I do anything and everything I can to help support the Susan G. Komen foundation. I’m glad to see the WWE partnering with a wonderful foundation to help raise money to fight breast cancer.

Another great program is the WrestleMania Reading Challenge. It’s so important for our children to have books and to learn how to read. Reading is such an amazing thing that will help your child with comprehension, spelling, vocabulary and more. I’m a huge advocate for pushing books onto children from birth. WWE, the Pearson Foundation’s We Give Books and the American Library Association’s Young Adult Library Services Association (YALSA) partnered together to bring children together to read!

One of my most favorite programs ever, by far, is Be a STAR (Show Tolerance And Respect) which was founded by The Creative Coalition and WWE in April 2011.  The mission of Be a STAR is to ensure a positive and equitable social environment for everyone regardless of age, race, religion or sexual orientation through grassroots efforts beginning with education and awareness. Be a STAR promotes positive methods of social interaction and encourages people to treat others as equals and with respect because everyone is a star in their own right. There is so much bullying now days, that if we don’t take a stand, who will? Anti-bullying starts with you and me!

Just launched August 2014 – The Creative Coalition and WWE, co-founders of the Be a STAR (Show Tolerance And Respect) anti-bullying initiative, will announce the S.T.A.R. Alliance, a group of actors, musicians, comedians, athletes, television personalities and members of The Creative Coalition, who have joined together to help put an end to bullying during Summerslam. The Creative Coalition, members of the S.T.A.R. Alliance and WWE will use their reach of more than 400 million social media followers to spread the Be a STAR message of showing tolerance and respect to help combat bullying. S.T.A.R. Alliance members will also participate and share their stories at Be a STAR anti-bullying rallies across the U.S., including later this week in Los Angeles as part of WWE’s community outreach events during SummerSlam®Week.

I’m so happy to see so many people joining together to help spread the word against anti-bullying as it’s so important! Some of the wonderful members include Daughtry, Omar Epps, Flo Rida, Pete Wentz, Gerard Way, Tony Hawk, Sean Kingston, Alyssa Milano, Sharon Osbourne, Darius Rucker, Train, and many more! Social media is so powerful, and as a blogger, I know this. You can get a message out to many many people, and anti-bullying is a great message to get out there!

If you haven’t checked out the many many programs that the WWE participates in the community, you must do so! Remember to do your part and help out in your community, make a stand, and stand up for something you believe in!

About Petunia Pickle Bottom

(As from their website)

“Founded in 2000, Petunia Pickle Bottom has become known the world over as the creator of the original, collectible, fashionable diaper bag. For more than a decade, PPB has been answering the call for stylish, quality products for modern moms on the go. What began as a tiny green shoot of an idea, carefully tended by three likeminded individuals on the California coast, is now a thriving lifestyle brand with global reach. The first glimpse of the initial collaboration was seen with the debut of the now wildly successful Boxy Backpack—an innovative and fashionable reinvention of the once unimaginative diaper bag. With their first collection, Petunia Pickle Bottom introduced the world to a market that simply hadn’t before existed. DeNai Jones, the founding designer and inspiration behind the company’s name (her father gave her the nickname when she was very young) has been the creative force behind the company since its inception. Inspired by travel, architecture, vintage textiles and a desire to bring style and sophistication to the world of modern parenting, Petunia Pickle Bottom’s bold graphic prints have become the signature of their collections, season after season. With these colorfully patterned products and an unrivaled attention to detail and craftsmanship, Petunia Pickle Bottom has become the go-to lifestyle brand for those who want to experience the adventure and joy of modern motherhood.”

For years now I have been a die hard fan of Petunia Pickle Bottom bags, and would even consider myself a collector of these pretty little bags. I am in several Facebook groups that are exclusive to the brand, follow their brand closely on social media channels, and have owned and tried out more styles than I care to admit. There is just something about Petunia Pickle Bottom that I can’t seem to get enough of!
When I heard they were introducing a new bag style this Fall, I was ecstatic. I couldn’t wait to see what they had in mind and after seeing teasers on owner DeNai Jones’ Instagram account, I was practically going crazy waiting for the release. Once I got the inside scoop on the new bag, it was instant love. I’m a sucker for a stylish purse and to me the Hideaway Hobo looks like a purse that I would instantly gravitate to a store, with all of the functionality of a diaper bag. When I packed it up, I was impressed with the amount that it held and even more impressed with the organization of the bag!
