Amazing Meatloaf

I made meatloaf for dinner tonight and my husband absolutely loved it, I did too of course. I kinda made it up as I go, so here is the recipe:
 Meatloaf
2 lbs ground sirloin
1 cup Italian breadcrumbs
8oz can of tomato sauce
1/2 teaspoon of black pepper
1/4 teaspoon of salt
1 egg
1 small onion
1/2 large green bell pepper
1 carrot
1 tablespoon of olive oil
1/2 teaspoon of Italian seasoning

Topping
1/3 cup ketchup
2 tablespoons of brown sugar
1 teaspoon of mustard

Directions
Preheat your oven to 375 degrees.
Dice the onion and green pepper into small pieces and grate the carrot.
Cook the veggies in a skillet with a tablespoon of olive oil and the Italian seasoning until the onions are translucent.
In a large bowl combine all other ingredients. Once the veggies are done mix those in as well.
Put on a large cookie sheet and shape into a loaf.
Combine the three ingredients for the topping and spoon over top and spread around.
Bake in the oven for approximately an hour.

Unfortunately I didn’t get a picture of it, but it was a hit and I will be making it again.

  1. add a dash of nutmeg to your ketchup mixture. it brings so much to the flavor. i thought it was a strange addition but i can tell if i’ve forgotten it!! 🙂 and then let me know what you think!!!

    I’ve never been much of a meatloaf fan, but then again my mom always made it and she’s a terrible cook. I may be willing to try this.

    It’s amazing how many different meatloaf recipes out there. Everyone seems to like it differently. My daughter In law puts ketchup and tomato sauce in the loaf. I put it on the outside, and my daughter likes to dip hers in fresh ketchup. Three different ways and that’s just using one ingredient. Keep experimenting and enjoy many different ways. Thanks!
