Recipe: Yogurt Cereal Bars

I tend to get a lot of my recipes from mommies in my mommy group, and this is one of them. I am posting it on here, not only to share with you all, but to have it for myself as well.

Ingredients:
2 cups corn flakes
3/4 flour
1/4 cup firmly packed brown sugar
1/2 teaspoon cinnamon
1/4 cup butter or margarine
1 cup flavoured yogurt (banana/strawberry etc..)
1 egg slightly beaten
2 tablespoons flour

Directions:
Preheat oven to 350F
Combine cereal, 3/4 cup flour, sugar and cinnamon in a small bowl.
Cut in butter or margarine until coarse crumbs form.
Press 1/2 the mixture firmly into the bottom of a greased 8inch square pan.
Mix yogurt, egg and 2 tablespoons flour in another small bowl.
Spread over cereal mixture in pan and then sprinkle the remaining cereal mixture on top.
Bake for 30 minutes or until golden brown; cut into bars when cooled.

    This sounds like a nice alternative to the cereal bars you get in the store. I’d change it up a bit, though, and use organic meusli or granola instead of the cornflakes.

    This would make a great breakfast-on-the-go. Have you ever tried them with whole wheat flour? I’ve found baked goods with yogurt usually turn out nice and moist.

    Yogurt bars are really popular right now. Nice to have a way to make them at home using easy ingredients.

    I recently saw that Zone has come out with a Greek Yogurt bar. Love this idea. My daughter needs to get in more protein, but she likes sweet, baked goods for snacks. We have found some bars and other items but not much. I’m hoping yogurt bars may help her to get protein in a way she’ll eat, and this sounds good.

  6. I am always trying to find recipes that I can take place of some of the things I buy in the store. Many times, I can make something much healthier and free from all the “crap” they put into such simple foods. This is a great starter recipe for that!
