Recipe: Bean Soup

I saved the ham bone from the ham we had on Thanksgiving and threw it in the freezer.When I was little I remember my mom always made a bean soup with a ham bone as well. The weather has been freezing cold here for days now, in fact it’s 32 degrees outside right now. Here is the recipe!

Bean Soup in the crock pot
Ingredients: Ham Bone
7 cups of chicken broth
1 onion, diced
2 celery stalks, minced
1/2 teaspoon of pepper
1 tablespoon of minced garlic, or 1 clove
1 lb of Great Northern Beans, rinsed and pick bad ones out

Basically you just throw everything in the crock pot and cook on 7-8 hours low.
In the last hour pull your bone out and get the meat off of it, put the meat back in.
Mash up about 1/2 cup of beans to thicken up the soup, stir it all together.
Serve! I served with mini corn bread muffins that I made.

168 Calories, 34 Carbs, 2 Fat, 19 Protein, 18 Fiber

    Bean soup sounds like such comfort food for wintertime. Even though I’m reading this and it’s getting close to 100 degrees (summer in the desert!) still sounds good in the slow cooker, which won’t heat up my kitchen.

    I love a big bowl of beans and northern is wonderful. The ham adds a delicious flavor. This is warming and just some good, easy home cooking.

    What a simple recipe! As I read a lot of your recipes, I am realizing I do really need a slow-cooker (crock pot? what is the difference?). Maybe I’ll find one under the tree this year!

  9. This sounds good, beans with ham is one of the things I miss that my grandmother made. I never make things with meat since I am a vegetarian though.

    This is a great recipe, vegetarians will have to leave out the ham bone. Mayne using vegetable broth in place of the ham bone might work. Thank you for sharing this recipe.
