Guest Post Recipe: Crockpot Chili

Guest post from Becca over at Manic Mama of 2, she has an awesome recipe for Chili, so I thought she should share it with my readers!

“There is nothing that I hate more than cold weather, well maybe being sick, but that is not the case today! It is the coldest that it has been here in a while in North Carolina, and I felt really badly about my hubby having to go off to work at 6 AM this morning. He was getting dressed and I just looked at him having to put on two pairs of long john pants, a tank top, a thermal shirt, and THEN his Dickies brand work pants and his bright yellow work shirt. Made me feel just a little bad that I get to stay at home with our little one while he goes out in this cold weather.
They are also calling for snow tonight, which is a really rare thing in our area. (I live in the county just above the Outer Banks). My husband works in Norfolk, VA. I am sure many of you are more familiar with that area…maybe. Anyway, I told him that I would have chili in the crockpot when he got home, and you should have seen the look on his face! It was like that was going to be the highlight of his day. So I have to make it good! And of course, in this house, we always have cornbread with our chili. I wanted to share with you all a recipe for some really great chili and then also let you in on a southern secret for cornbread.
Slow-Cookers-Chili
Makes 8 servings.
Prep Time: 10 minutes
Cook Time: 8 hours on LOW or 4 hours on HIGH
2 pounds lean ground beef or ground turkey
1 package McCormick® Slow Cookers Chili Seasoning Mix
2 cans (14 1/2 ounces each) diced tomatoes, undrained
2 cans (16 ounces each) kidney beans, drained and rinsed
1 can (15 1/2 ounces) tomato sauce
1. Brown ground beef or turkey in large skillet on medium-high heat. Drain fat.2. Place cooked beef, Seasoning Mix, tomatoes, beans and tomato sauce in slow cooker. Stir until well mixed. Cover.3. Cook 8 hours on LOW or 4 hours on HIGH. Stir before serving.
Slow Cooker Tip: For best results, do not remove cover during cooking.
Okay where it says diced tomatoes, I was given a little hint of something different to use to make the chili just all that much better. Use Italian flavored diced tomatoes! It made all the difference. I did not have to add much more spice like I was used to having to because this gave the chili a great little ummpphh! I also don’t use the tomato paste or sauce in mine, I use water. But to each their own! Still turns out great either way, my hubby just thinks it tastes too “tomato-ey”. His words, not mine.

And for cornbread we use…JIFFY!

I add about two to three tablespoons of sugar to the mix to make it oh-so-sweet. That is a good old southern secret that my Daddy taught me when I was younger….and we don’t add real corn to ours. My husband thinks that is utterly disgusting lol
So here is your cold day fix….pull out your crock pot and make some chili and cornbread “

I had no idea we were so close! 🙂 I didn’t go out in the cold today at all because I have a NASTY cold and I am 39 weeks preggo! I’m really hoping it’s gone before I go into labor!

  9. Seems to be alot more crock pot recipes online lately. I been using my crock pot more not to.
    This is a good recipe tho I dont know if I could use turkey -they might not like it that way.
    Jiffys corn bread is the best we use that all the time . thanks for the recipe

    I know it is getting warmer, but I love comfort food year round and chili is one of them. The crockpot version here looks and sound great and easy to make! We LOVE Jiffy cornbread LOL. I make 3 boxes and cook it in a cast iron skillet. Makes the best browned crust!

    You posted this when the weather was cold, but now that it’s summer, this would still be a tasty dinner since the crockpot doesn’t heat up the kitchen! Sounds delicious, topped with some tortilla chips and a dollop of guacamole.

    Love Jiffy corn bread mix, and I add sugar, too. It just adds to the flavor. Chili is a very versatile dish. There are many delicious ways to make it, and crock pot recipes are great for it. It gets to stew all day in the wonderful seasonings.

    I haven’t made corn bread in ages. I love to add jalapenos to mine or brush the top with a mixture of butter and honey. I’ve been searching for a good crock pot chili recipe, though, so I’m going to have to give this a try!

  18. Yum! I do love my crock pot. There’s nothing like coming home after a busy day to find a warm meal almost ready. Chili is a really good one, as there are so many ways to change it to perfectly fit your family’s taste. I’ve never used Italian spiced tomatos before, and will have to try it!

  19. This may be listed as a cold-weather recipe, but in this July heat, I’m thinking that slow-cooker chili might be just the thing to make without heating up the kitchen. I usually do it on the stove-top, but I feel inspired to try it in my slow cooker for a change–a cool change! Thanks!

    This looks delicious! It’s always a great thing to find a recipe that seems easy to complete as well as tastes great. I like a little spice in my chili and it looks like that would be easy enough to add into this recipe. And I love that you use Jiffy! They are a family favorite. And really, what is chili without cornbread??

  30. We love to put Jiffy mix muffins in our chili. Yummy!! And I add a whole banana pepper that I have sliced it down the middle and taken the seeds and white part out of the middle so it’s not hot and just throw it in there in two big ole pieces until the chili is done. It adds a lot of flavor without the heat.

  37. Homemade chili is much better than canned – a totally different flavor. You make your pretty much the same as I do . Tho sometimes I use tomato sauce other times just tomato soup- depends on whats in the cupboard. Great in the crockpot for football parties. As for the corn bread thats the kind I use – we love it .

    This is an easy and delicious chili recipe to make in the Crockpot. I would use turkey meat and make this healthy buy adding some green peppers. But I really like this recipe!

    I like your idea of adding some extra sugar too the cornbread. Sweet cornbread with salty chili, all in the slow cooker!

  55. Chili and cornbread…nothing more hearty to warm the body and soul! I need to get me a slow cooker! As for the cornbread, my hubs is not a fan either but I love it…so we compromise with maple whipped butter. 🙂

  65. We don’t use a mix for chili.We use fresh tomato, several different peppers and vegetables. Ground beef and beef tenderloin when we have it. My husband makes excellent chili. I’m not quite sure of all the different spices he adds. I know we never have leftovers.

  66. Chili is one of my favorite meals. And, it tastes better after it sits for a day. My husband likes corn bread. I think it tastes okay. I don’t like the texture.
