Nutrisystem Vegetable Recipe – Tomatoes, Cucumbers, and Onions

I love posting recipes for my viewers and as most of you know I’m now a blogger for Nutrisystem.

I have been looking at ways to incorporate the unlimited vegetables into my diet and I came up with this simple recipe that’s really good!

Ingredients:Grape Tomatoes
Sweet Vidalia Onion
Cucumber
Low-Fat Italian (I used Low-Fat Kraft Zesty Italian)

In a small bowl with a lid, cut up your serving that you will have for dinner/snack/lunch or whenever. Pour your dressing over top, put on the lid, and shake. I used 1.5 Tablespoons of the dressing because I want to get the vegetables coated well and marinated, there will be dressing left in the bottom of the bowl that you won’t end up eating, so I only count 1 Tablespoon out of my Extras for the day. I usually do this a few hours before I eat it, because it marinates well and gives the veggies more flavor.

  13. This looks so delicious . I like these types of salads , I could eat them all summer long. I have the tomatoes and cucumbers fresh from my garden all I have to do is buy an onion. Yes it does get better with the flavors if it sets for awhile. thanks for the recipe

    If only this recipe did not have cucumbers in it. Cucumbers, for some odd reason, do not suit my stomach. I will burp for the rest of the day and it does not taste good.

    This reminds me of what my grandma would make in the summer except she would just use vinegar and sugar and let it set overnight in the refrigerator over night. The next day it would be so good. I never thought of doing it with italian dressing.

    Right now with all the garden vegetables coming in, this is a perfect recipe to help use them. The dressing will make it feel that you are eating much more than plain veggies and will help you stay on your diet.

    I usually do a vinegar and water mixture with my cucumbers and onions and my husband and I love it. I had never even thought about italian dressing as a marinade , this is awesome. Italian dressing is the only dressing my husband will use on a salad…duh at me haha Thank you, thank you for this simple but oh so delicious recipe.

    My mom makes this with home-grown fresh tomatoes and cucumbers from her garden every year! It is so good! She usually uses the Hidden Valley packets, or she’ll find an interesting dressing to use to change it up. She gets a lot of tomatoes and cukes!

    This look yummy – I make something similar by halving grape tomatoes, chopping cukes and thinly sliced red onion. I sprinkle it with red wine vinegar and sprinkle with a small amount of sea salt. The vinegar combines with the juice of the tomatoes, cukes, and onion and it is so yummy and low cal. You can add a touch of Extra virgin olive oil if you think you need the fat. I make a huge container at the beginning of the week and eat a small bowl whenever I have an overwhelming need to snack between meals.

    Looks so good! I love to see recipe’s with cucumbers in it. They do so much for the body. Cucumbers hydrate you and help you to lose weight so this is the perfect/sweet snack for me. I am diabetic and this recipe looks so diabetic friendly and delicious.

    I know this is good. I make a similar salad but I add pasta and parmesan cheese. I guess with the Nutri-System plan you have to eliminate carbs and find interesting ways to get you veggies. If you let the veggies set over night in the dressing I am sure you could get a big kick from the flavor!! I would make a large bowl of this and divey it out during the week. The longer the veggies marinate the more flavor!

    I like to make this recipe too but I always add some orange or yellow pepper to it too.
    I also add a tsp of honey or agave sryup to my dressing cause I like that sweet and sour taste. Give it a try you might like it that way too!

    My husband does something similar. I slices cucumber, tomato, black olive and shops up onion. Lay out all the pieces on a plate. Then pour a little Italian dressing over the vegetables.

  116. This would make a great healthy snack! I think instead of using a bottled dressing (I don’t like the ingredients in Kraft), I would try to make my own using olive oil, a citrus juice, pepper and some avocado. Delish!

    This reminds me of my Great Grandfather, He would make us cumbers, onions and let it set in a little vinegar. So I do that and add tomatoes to it. It is so good, and sometimes I will change it up and use the Olive Gardening salad dressing, So good, My SO thought I was crazy but he is now hooked too.

  143. We tried this recipe a few weeks ago. It was good, but it was even better when we added feta cheese. Of course, feta cheese is probably not on the list of accepted foods on the Nutrisystem, but it was really good 🙂

    So simple! An alternative: put everything in a food processor (add a few extra tomatoes and some additional vinegar and if you are up to it, half a fresh jalapeno) and pulse a few times. Let it chill and voila – Gazpacho!

  158. I like to make my own dressings, the only exception of one I buy is low-fat Italian, and this one by Kraft is a great one! I love having a small salad with meals. I especially like having salad that has marinated in its dressing, along with a nice piece of Italian bread, so satisfying and yet not too many calories!
