    I like the Individual Layer Dip Cups idea! With this you don’t have to worry about other double dipping or crowding around the dip bowl. I never liked putting dip on my plate either because it’s just so hard to get all of it esp if it’s more of a liquid texture to it (then it gets all over your food).

    The taco pizza looks good! It didn’t even look like a pizza until I read the description and really looked at the picture lol Looks like it would be messy! I usually end up eating meat off of my plate after eating tacos because of it falling out of my shells so it wouldnt be anything different if I would eat the pizza with a fork. lol

    Man these look good! One of my favorite cinco de mayo recipes is bacon corn. It isn’t “mexican” but since we are already grilling I add it on!! Just wrap raw bacon around raw corn, then foil and grill 15 mi ns!

  61. Those all look good – I really like the small cups with the dip. We have a dip we make in a large pan that we often use for ‘football-type’ days and sometimes just as a dinner. It is pretty easy – with re-fried beans, nacho cheese sauce, cooked ground meat (or you can use chicken), salsa, shredded cheese and you can add or replace the ingredients and you just put in the oven around 400 degrees for about 10 minutes or until the cheese is melted and it is really good, thanks!

Great idea.I love the layer dips but you have to slide the chip and dip all over your plate. I can have some dished up or they can make their own.

I was going to comment on the Mexican Lettuce Wraps and Spanish Rice because they looked so appealing, but then I saw the truffles and my mouth started watering.   153. I Love Love LOVE the idea of the Individual Layer Dip Cups for nachos!!! That is seriously brilliant and I almost like it better than everyone digging into one big dip, or even dishing out of one big dish because the dip itself really starts to look bad once you have had so many people scoop/spoon out of it.

    The Mile High Nachos have so much ground beef and cheese in them that that alone makes them tremendous before you add all the other delicious ingredients . They are a good addition to the Cinco de Mayo recipes.

    The Churro Truffles are an amazingly inventive idea – to combine the taste of fried cinnamon donuts in a truffle. If you are using cream cheese and white chocolate I am instantly a fan.
