Recipe: Cheddar Corn Casserole

They have this great recipe for Cheddar Corn Casserole that I plan on making for the upcoming Easter weekend. It sounds so easy to make, with simple ingredients that all of our invited company will love. The best thing is, you can add in other ingredients to make it your own recipe.

Ingredients:

3 cups shredded cheddar cheese (about 12 oz.)

2 Tbsp. all-purpose flour

1/2 tsp. black pepper

3/4 cup milk

4 oz. cream cheese, softened

2/3 cup sliced green onions, divided

1 tsp. bottled hot sauce

4 cans (15.25 oz. each) Del Monte® Whole Kernel Corn, well drained

(You can add in any of the following to make your dish unique and you!)

1-1/2 cups croutons or crackers, finely crushed (optional)

4 strips bacon, cooked and crumbled (optional)

1/2 cup diced red bell pepper (optional)

2 cups chopped, cooked ham (optional)

Directions:

-Preheat oven to 350°F. Mix together cheese, flour and pepper in a medium bowl; set aside.

-Stir together milk, cream cheese, 1/3 cup green onions and hot sauce in a 9” x 13” baking dish.

-Add corn and shredded cheese mixture; stir well to blend evenly.

-Cover and bake 30 minutes.

-Uncover and sprinkle remaining 1/3 cup green onions and optional toppings, as desired. Bake 5 minutes longer.

    I read the recipe thru and I am not so sure my family would like this as
    much as my scalloped corn recipe that my husbands Grandmother use to make(no hot sauce)

    This is a great recipe for a corn casserole . Anything with this much cheddar cheese in it has to taste delicious. I like the list of possible add-ons , especially bacon.

    This dish paired two of my kids favorite foods. Corn and cheese. They loved it. My husband did add a few things but I knew he would. Even with out the changes this is a great recipe. He does the cooking. I’m more step by step. They already want to have it again.

    This is a great main course recipe and I would keep it vegetarian for my family by using some type of diced vegetarian “meat” such as Morningstar Breakfast Strips that were sliced up. It is a good thing to take to a potluck as well and with a salad it makes a whole meal.
