Guest Post Recipe: Stuffed Zucchini Boats

We have another wonderful guest post recipe today from DonnaHup.com! I love checking out the posts over on her blog as well as all of her recipes. I really love eating clean and how I feel when I eat that way. I will confess though that I still crave things like buffalo wings and pizza. Thankfully I have been finding healthy alternatives like Buffalo Cauliflower Bites and now Zucchini Boats! This has become one of my favorite dinners. I have been having it at least twice a week and they’re very easy to make!

Ingredients:

  • 2 zucchinis
  • tomato sauce
  • pizza toppings

1. Preheat the oven to 400 degrees.

2. Cut the Zucchini lengthwise and scoop out the center so they’re like boats.

3. Fill in the boat with tomato sauce.

4. Start piling on the toppings. Some of my favorites are black olives, onions, and mushrooms.

I also like Oregano and Nutritional Yeast . If you’re not vegan or dairy free you could add cheese. That is why I use the Nutritional Yeast. It gives it a cheesy taste.

5. Cook for 20 to 25 minutes at 400 degrees.

  12. I’ve never tried Zucchini other than in bread and fried w/bread crumbs! However, This sounds like a terrific recipe that I just might like. I have saved the recipe and I think I’m going to give it a try. I may chance a few toppings though. We don’t eat mushrooms or black olives. Other than that, it’s wonderful!   18. I was wondering what yeast flakes were. They taste like cheese? That’s interesting. I love squash because the flavor is generally mild so it works well in many dishes.

  32. Yumm. I LOVE zucchini and tomato sauce together. The mushrooms would be really good too. I thought to myself that I would add cheese. However, I saw you used nutrition yeast, which is just as good. Thanks for the boat idea. I have only done as more of a pasta.

    I love veggies and zucchini’s are one of them, but don’t really have many recipes for them, so thank you for this one. I will give it a try. I usually just do the regular bread, saute them, or bake them with some parmesean cheese on them. This will be a nice change for us. Love mushrooms too… oh and I also like to make them with some pasta. Don’t forget that people… add some veggies in with pasta.. toss with some olive oil and garlic. YUM!!!!

  58. That doesn’t sound bad. I might try it. I would use an Italian cheese blend and actual pizza sauce. I can’t eat bread, so this would givr me a flavor of pizza without the bread bloat.
