Southwest Burrito Bowl Recipe

Southwest Burrito Bowl

If you know me, you know I love anything Mexican, Southwest, Tex Mex…anything with spice, cheese, sour cream, all of it equals yum. I could eat it every single day and not get sick of it. This is a great recipe for someone looking to count a bit of calories since there are no tortillas used in this post which is where a lot of hidden calories and carbs are hiding. A deconstructed burrito, like a burrito bowl is definitely the way to go and a crowd or a family pleaser!

Ingredients:

1 pound boneless, skinless chicken breasts, diced into bite sized pieces

3 tablespoon of olive oil

1/4 cup of diced yellow onion

1 cup of uncooked extra-long grain rice

1 – 14.5 oz can of diced tomatoes, drained

1 – 15oz can of black beans, drained and rinsed

1/2 teaspoon of garlic powder

1/2 teaspoon of chili powder

1 teaspoon of cumin

2 1/2 cups of low-sodium chicken broth

2 cups of colby jack, monterey jack or cheddar cheese

kosher salt and pepper

freshly diced tomatoes

diced green onions

sour cream, guacamole, avocado, sriracha – all optional as garnish

Ingredients1

Directions:

-Sauté onions in 2 tablespoon of olive oil until they start to soften.

-Season diced chicken with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

-Add chicken to pan and cook over medium high heat until chicken has started to brown.

Chicken and Rice

-Move chicken to one side of pan, in the other side of the pan add an additional tablespoon of olive oil and sauté uncooked rice for about 2 minutes or just until grains start to turn golden brown.

-Stir in black beans, canned tomatoes, chicken broth, garlic powder, chili powder and cumin.

During Process

-Bring to a simmer, cover and reduce heat to low.

-Cook about 20 minutes or until rice is tender.

-Season with additional salt and pepper as needed.

-Sprinkle with cheese, add lid back on and let set for 2-3 minutes off heat to melt cheese.

-Garnish with fresh tomatoes, green onions, sour cream, guacamole, avocado, and MY favorite sriracha!

  7. That looks like a good recipe. I love Mexican food. At least Taco Bell Mexican which I doubt is too authentic. I would use ground beef instead of chicken. I’m going to pin this to try next week.

    You know, this actually looks pretty good to me. I lived in Nevada for a few years, and the “Mexican” food I ate there really turned me off. It seemed like everything was blanketed with balck olives and cilantro, and that’s all I could taste. But I think I’m going to try this – it might make me appreciate this cuisine again!!   33. This is such a good basic recipe. You can change the meat used. And also serve it different ways. It should make everyone happy. Use a taco shell, tortilla wrap or serve over rice or green salad.

  35. I love Mexican food and the Southwest Burrito Bowl has great ingredients in it. But what I most appreciate is that it can be made in one pan. My husband cooks and I clean up and this would be so much easier than what we do for Burrito Bowls.

  42. I love those cheese blends cheddar is good too. These have a creamier texture and taste. I sometimes use a shell and heat it with nothing but cheese.
