Recipe: Low-Carb Strawberry Fluff Cheesecake Dessert
I’ve been on a low-carb diet for almost a month now. I’m staying under 20g of net carbs a day and I’ve actually been doing really well. My problem is I finally hit a point in my way of eating where I want something sweet as I’ve cut all sugar out of my diet. I’m not a huge fan of sweeteners, I don’t care for their aftertaste, so it’s hard for me to find something I like and can still stay under my carb allowance. I searched around pinterest a bit, and found a few recipes here and there. I decided to try and make my own strawberry dessert. I believe this dessert would be good if you’re doing “dirty keto” as well, sweeteners aren’t allowed if you’re doing the strict ketogenic diet.
I’m a huge fan of strawberries, and I like cheesecake, so I made something combining both. This dessert is really delicious and of course you can switch up the flavors too. It would be great with raspberry or lemon! You could even add a handful of berries on top of your dessert as well, that would be delicious.
Ingredients:
16oz of Heavy Whipping Cream
8oz Block of Cream Cheese
1 Large Box of Sugar Free Strawberry Jello (obviously you can use whatever flavor you’d like)
Directions:
In a bowl, pour in your heavy cream, whip until soft peaks form.
Cut your cream cheese into a few pieces, so you can put in one piece at a time. I did 3 pieces.
Whip your cream cheese into your heavy cream.
After that’s combined, pour in your jello mix.
Mix completely until incorporated.
Scrape the sides off your bowl and off the beater and give it one quick mix.
Put in your refrigerator for 2 hours to set up.
It’s that simple. Only 3 ingredients, takes less than 5 minutes to make and you can switch up flavors as well. Enjoy!

Better than any Keto ice cream out there. Froze mine in mini muffin pans . ( 24) great little dessert. I made the strawberry , and as it’s strawberry season I mashed 3 large ones and added for texture. I used my every day hand mixer , everything turned out as seen above.

Can a hand-held mixer work? I don't have a large mixer like that.

This was so easy to make. I used sugar free whipped topping instead. My husband who is diabetic loves this. I will be making this again but in different flavors.

Just finished making this. It is sooooo good and I'm sure its even better when it chills for the 2 hours. Next time I make it I am going to put in 2 boxes of jello. I used the sugar-free black cherry.
