Recipe: Sweet Broccoli Raisin Salad

4-5 Cups of fresh broccoli florets (I like buying the broccoli already in the bag in the produce section, no prep time!)
1/2 cup of Bacon, cooked and crumbled
1/2 cup of raisins
1/4 cup of red onion diced small
1 cup of mayo (I used the Kraft reduced fat, made with Olive Oil)
1/4-1/2 cup of sugar (I like mine sweet, so I lean towards the 1/2 cup!)
2 Tbsp of vinegar (I use white or red wine)

Combine the mayo, sugar, and vinegar in a small bowl and place in refrigerator to cool down while making the other.
In your large serving bowl pour in the broccoli. Make sure it’s in bite size pieces. Add in the bacon, raisins, and onion. Pour about 1/3 of your dressing over top and mix together well. Then mix in some more until you feel that the salad is “wet” enough. It will soak up a lot of that while in the fridge. Save your extra dressing on the side for later on.
Refrigerate for at least 3-4 hours, even overnight is good. You can even add in celery, sunflower seeds, or grapes. I don’t care for any of those in this salad, but I know a few people do!
I like making this for pot lucks and parties…it’s gone pretty fast, so make sure you get some before everyone else!!

I don’t have any of these ingredients at home. Could you rewrite this based on the food I do have in my house? I’m not going to tell you what food I have. You have to guess. Just kidding!

I would have never thought of adding broccoli and raisins together.. might have to try this! Thanks
