That is not for me. I can't even eat a salad unless it has meat and cheese on it.

I think Meatless Monday is a great idea. I used to be a vegetarian but then I decided to add fish and poultry to my diet. I am the only person in my family who does not eat red meat at every meal.

I love the idea of "Meatless Monday's". It's very refreshing, especially after usually having had a heavy meal of some sort on Sunday, then usually having stress filled days on Monday's, it's nice to have an easy, light, and quick to prepare dinner for Monday nights. This is a great night to have a filling Pasta and Vegetable Salad, usually made with spiral pasta, chopped tomato, cucumber, onion and green pepper, some finely grated Parmesan Cheese, and your favorite Italian Dressing or Red Wine Vingarette. Serve it with some fresh Garlic Bread or Garlic Bread Sticks and a glass of Red Wine, and it makes a wonderful dinner.
