Recipe: Basmati Rice with Asparagus

I don’t know about you, but me being a busy mom, I really don’t have a lot of time to spend in the kitchen. Between hauling my children between school and extracurricular activities and running errands plus all the house work at home, and working, there’s not much time in the day left. I still want to treat my family to a good meal though. That’s why I always have Success® Rice in my pantry. It’s one of my go to choices when making a meal for my family. I wanted to share with you one of my favorite dishes made with Success® Basmati Rice.

Success® Basmati Rice is the only brand that is boil-in-a-bag which makes cooking dinner that much easier. If you haven’t had Basmati rice before it’s long and slender and elongates 3-4 times in length when cooked. It has a distinctive fragrance and fluffy texture. With the boil-in-a-bag feature (which is BPA free) you can have rice ready in just 10 minutes without measuring and without any mess. That’s what I call easy for a weeknight dinner. Ingredients:
1 Tablespoon of Coconut Oil
1/2 Medium Onion, Diced
8-10 Asparagus, Roughly Chopped
2 cloves of garlic, chopped
1 Boil-in-a-bag Success® Basmati Rice
Salt and Pepper to taste

Directions:
Boil some water in a sauce pan for your rice. Add rice in it’s boil-in-a-bag. Set timer for 10 minutes.

In a medium saute pan, add in the coconut oil over medium heat. After pan is hot, add in onion and asparagus.
After about 5 minutes add in the garlic.
Saute together for 5 more minutes til onions are translucent.

Once rice is done, drain off water and add to pan with veggies.
Saute together for 1-2 minutes until everything comes together, add salt and pepper, and serve.
Enjoy.
