This is a super yummy and tasty dish. Crockpot Red Beans and Sausage is so easy to make and you will make this again and again. My family loves it! Serve it over white rice in a big bowl, make sure to have some Tabasco or hot sauce on the side! Set this up in the morning before work and forget it!
Ingredients
1 pound dried red beans
3 cups water
4 cups of Chicken stock
2 green bell pepper, chopped
1 medium onion, chopped Yellow or Red
3 celery stalks, chopped
1 pound andouille sausage and smoked sausage sliced to 1/4 inch thick (or you can use just one or the other)
3 garlic cloves, chopped or 2 Tablespoons of minced garlic from a jar
4 tablespoons Creole seasoning
3 bay leaves
1 teaspoon of Chili Powder
2 teaspoons salt
2 teaspoons hot sauce
1 teaspoon ground black pepper
4 cups cooked rice
(For a healthier option use 7 cups of water and omit the chicken stock, use turkey sausage, and brown rice.)
Directions
Check red beans for any small pebbles then rinse thoroughly.
Add beans, water, and chicken broth to the crock pot.
Chop all the veggies and add to the crock pot.
Next, chop the sausage.
Complete it with creole seasoning (I used Tony Chachere’s) and spices.
Turn the crock pot on high for 7 hours. When ready to eat, prepare your rice.
(Don’t forget to take out your bay leaves!)
Pour your crockpot red beans and sausage over rice and serve. I like to serve with hot sauce or Tabasco, and a side of corn bread!

This is a version of the great comfort food of my home (New Orleans); served as Red Beans n' Rice. It has diced Bell Peppers in it and Andouille Sausage but is otherwise the same.
