Farm fresh corn salsa is one of my favorite recipes as I tend to make this one or two times a week. It’s great on tacos, burritos, nachos, eggs, chicken, fish, or even just by itself with tortilla chips. It’s so versatile and has such amazing flavor. On top of that, it’s super simple to make! I love making this organic, but it’s easy to make however you choose.
Ingredients:
1 Corn on the Cob
3 Plum Tomatoes
1/4 cup of red onion
1 Jalapeno
Cilantro to taste
Salt & Pepper
1 teaspoon of Olive Oil1 lime
Directions:
Slice the corn off the cob. (You can roast this prior to, or cook in a pan with some olive oil)
Dice up your tomatoes, making sure to remove the seeds and innards.
Dice up your red onion small.
Dice up your jalapeno, removing any seeds or membranes (remember those are SUPER spicy, you can keep them if you want!) You can even add just half of the jalapeno if you’d like.
Chop up your cilantro, I only use a little bit, as my husband doesn’t like a lot.
Place everything in a bowl.
Juice of one lime and teaspoon of Olive Oil added in, and a dash of salt and pepper.
This is a super simple recipe to double or even triple. Add salt and pepper to taste. Once you make this, let it sit in the refrigerator for at least an hour to let the flavors meld together. Enjoy your farm fresh corn salsa!

I love fresh salsa but I may have to seek out another onion as I am growing purple tomatoes this year. My neighbor has the peaches and cream sweet corn so this should be amazing!
