Recipe: Green Chili Chicken Burritos

I got a bunch of Green Chili enchilada sauce on clearance the other day and I’ve been itching for some yummy tex mex burritos. There aren’t any burrito places around here like Moe’s or Chipotle, so I have to make my own. This was something I just threw together, and I was really impressed on how it tasted. I will be making it again.

Green Chili Chicken Burritos
Ingredients:
4 Boneless skinless chicken tenders, cooked and shredded
1/2 can of Rotel, drained
1 10oz can of Green Chili Enchilada Sauce
1 Small onion, diced
1/2 Green pepper, diced
Vegetable oil/Canola oil (whatever you like to use)
Chili powder, cumin, garlic powder

Directions:
In a skillet put in a few tablespoons of oil and start to saute your peppers and onions.
Once they are cooked a bit, sprinkle in some chili powder, cumin, and garlic powder. I put more chili powder, less cumin, and a little garlic. (I never measure spices)
Saute a few more minutes and then put in your 1/2 can of Rotel (Canned diced tomatoes w/green chilies).
Cook that for about 5 minutes, then add your chicken and your enchilada sauce.
I stirred this frequently and cooked on low for about 10-15 minutes. I like to let the flavor get into the chicken a bit and let it all thicken up and come together.
It’s now ready for your burritos! It was just me eating this tonight as hubby is out of town, so I only had one burrito.
Large flour tortilla, sour cream, lettuce, cheese, salsa, and some of the chicken mixture. Wrap it up like a burrito/wrap and eat it up!! Mine was SUPER messy,  but I didn’t care, it was SOOO good.

I love seeing any new recipes with chicken in them and this sounds so good with the green chili sauce and rotel. I just love rotel, the milk one and not the real hot kind.
