Easy & Delicious Mexican Lasagna Rollups Recipe

These turned out REALLY good, and I will be making them again! It’s such an easy meal for a weeknight and the perfect kind of comfort food for wintertime.

Mexican Lasagna Rollups Recipe

Ingredients

  • 1lb of Ground Beef (you could use ground chicken or ground turkey if you prefer)
  • 1 8oz block of cream cheese (I used and recommend Philadelphia Cream Cheese because it melts better)
  • 1 10-ounce can of Rotel, drained
  • 1 small 8-ounce can of Tomato Sauce
  • 2 Tablespoons Chili Powder
  • 1 Tablespoon Garlic Powder
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Yellow Onion, diced
  • 1 16-ounce Jar of Salsa
  • 1 lb box of Lasagna Noodles
  • 8 oz of Cheddar Cheese

Directions

  1. First thing boil your noodles according to the package, drain, and set aside to cool so you can handle them.
  2. In a large skillet on medium heat, cook ground beef and onion until cooked thoroughly.
  3. Add chili powder, garlic powder, salt, and pepper. Stir and cook for another minute.
  4. Add in Rotel and tomato sauce and simmer for about 20 minutes. You can cook longer if time allows. The longer it cooks, the better it tastes! Add water if needed if you allow it to simmer for a while.
  5. Add a block of cream cheese. I cut mine into about 8 pieces before adding to help it melt faster.
  6. In a 9×13 baking pan put enough salsa in the bottom to cover it so the noodles don’t stick.
  7. Preheat the oven to 375 at this point.
  8. Take 1 noodle at a time and spoon the mixture onto a lasagna strip, then roll it up. Place in the pan like shown in the picture below.
  9. Once the pan is full spoon any leftover mixture over the top of the rollups.
  10. Top with cheddar cheese.
  11. Bake in oven until heated through and cheese is melted, about 15-20 minutes.
  12. Serve with sour cream and or salsa if you want.

My husband prefers mexican to italian anyday, I am the opposite, maybe I can make a pan of these for him and a pan of my regular lasagna and we'll both be happy. :)

Never tried any recipe like this before but what a great change this would be. I love using rotel, it gives everything such a great flavor. Thanks for sharing this!

This is such a delicious recipe. I can see why it is so popular. I like the change form lasagna to lasagna rollups. You can also then better control how much is made. I shall use less chili powder in mine.
