If you’re anything like me, you’re already making yummy foods that are great for Summer. I just love Summer foods, fresh vegetables, and I LOVE salads. This is a great salad for Spring, Summer, Fall, or even Winter. You’ll love it. It’s great as a side or even a main dish!
Ingredients:
2 cups of cooked quinoa (cook the quinoa in vegetable stock for added flavor)

1 carrot, peeled and shredded
2 green onion stalks, sliced
1/4 cup red onion, chopped
1 cup of cherry tomatoes, sliced in half
2 Tbsp of cilantro, chopped
1/2 English cucumber, diced
1 cooked zucchini, diced (I roasted mine)
1 cup of broccoli, cut small (either raw, steamed or roasted)
4 oz of Feta or Goat Cheese
1/4 cup of Olive oil vinaigrette (your preference)
Directions:
*Make sure you’re using cooked quinoa!
In a large bowl add the cooked quinoa, then all the vegetables, but do not mix just yet.

Allow it to sit in the refrigerator for at least 30 minutes before serving.

Isn't Quinoa the best stuff. I wonder where it was before the year 2000, because before that it simply didn't exist.

Thanks a lot for this. I am trying to lose some more weight and I have noticed in many nurtrition books quinoa is listed as a good grain to incorporate in one's diet. I appreciate all the recipes I can get. :)
