Recipe: Raspberry Thumbprint Cookies

I am not good at making desserts from scratch, but in fact I have realized it just makes me nervous because these cookies turned out absolutely amazing!! My husband came in and ate one, and then grabbed the ENTIRE plate and went and sat down in front of the TV…I had to quickly tell him each cookie was roughly 75 calories…he only ate 5…lol

Ingredients:
1 cup of unsalted butter, softened
4 oz of cream cheese (I used 1/3 of the fat Cream Cheese)
1 cup of sugar
1 egg yolk
1/2 teaspoon of vanilla extract
2 1/2 cups of all purpose flour

Directions:
-Preheat oven to 325 degrees, and lightly grease cookie sheets (I didn’t but mine are non-stick)
-In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy.
-Beat in egg yolk and vanilla.
-Stir in flour until well blended.
-Roll dough into balls in your hand and put thumbprint into them.
-Fill each one with some Raspberry Preserves or what ever you like.
-Bake for 15-16 minutes, cookies will look pale, and slightly light brown on the bottom.

Having raspberries in this would definitely be a recipe I need to try for my sister. She even puts them on her chocolate ice cream. I am not a fan of that but these cookies do look pretty good to me

These cookies look delicious, the great thing about these cookies is that you can use any flavor of preserves that you want. I would also love to try this using chocolate instead of preserves. Thank you for sharing this recipe.
