I’m always looking for recipes that I can make for our holiday get togethers, and this is one of my favorite recipes. I knew I had to share it with you all, so you can make it too! I know these are a lot of steps to make this gorgeous and festive cheesecake, but I promise that the payoff is worth it!
INGREDIENTS
Red, white, and blue sprinkles mixed
RED VELVET LAYER
Butter, for cake pan
Flour, for cake pan
1 box red velvet cake mix, plus ingredients called for on the box
CHEESECAKE LAYER
2 8-oz. packages cream cheese, softened
2/3 cup sugar
2 large eggs
1/3 cup sour cream
1 Tbsp flour
1 tsp. vanilla extract
1/4 tsp. kosher salt
Sky blue gel food coloring
WHIPPED LAYER
2 cups heavy cream
4 Tbsp powdered sugar
2 tsp vanilla
1 piping bag fitted with a star tip
DIRECTIONS
RED VELVET LAYER
Preheat oven to 350º, flour one springform 9″ cake pan. Prepare red velvet cake batter according to box directions.
Pour your batter in the prepared cake pan.
Bake for 30 minutes.
Let cool slightly in cake pan.
CHEESECAKE LAYER
In a large bowl using a hand mixer or a stand mixer fitted with the paddle attachment, beat cream cheese and sugar until fluffy and combined, approximately 3 minutes.
Add eggs, one a time, until combined.
Add sour cream, flour, vanilla, and salt and beat until combined.
Split the batter into two bowls.
Add the sky blue gel food coloring into one bowl and mix until color is combined and the shade you’re looking for
Alternating between the two colors of cheesecake mixture, white and blue, scoop 1 C of each batter onto the top of the cake.
Pour filling onto cake pan and bake until only slightly jiggly in the center, 1 hour.
Let cool slightly, then transfer to the freezer to cool completely and firm up before assembling.
WHIPPED FROSTING
Add all the ingredients to a standing mixing bowl.
Using the whisk, whisk together the ingredients stiff peaks start to form.
DECORATING DIRECTIONS
Spread the whipped cream over the top of the cheesecake.
Scoop the remaining whipped cream into the piping bag and pipe dollops around the edge.
