This Cheesy Hamburger Rotel Dip Recipe Is Just What Your Next Party Needs!

My friend Miranda shared this Rotel Dip Recipe on the Thrifty Nifty Blog and I love it so much, I wanted to share it here for all of you.

This recipe is so easy to prepare and it’s absolutely delicious! You only need a few simple ingredients to create a delicious dip that the whole family will love. It’s perfect for your next party. We like to fix things like this on Sunday to eat while we watch football.

Cheesy Hamburger Rotel Dip Recipe

Ingredients

  • 1 pound of ground beef/hamburger
  • 1/2 tsp garlic powder
  • 1/2 tsp seasoned salt
  • 1/2 tsp onion powder
  • 1/2 tsp ground pepper
  • 1 Can Of Diced Tomatoes with Green Chiles
  • 1 Velveeta Cheese block (the 16-ounce size)
  • 8 Ounces of Cream Cheese
  • 1 Can of Cream of Mushroom Soup

Directions

  1. The first step is to brown the ground beef. In a medium-sized pan, brown the meat on medium-low heat along with the spices (garlic powder, seasoned salt, onion powder, and ground pepper).
  2. Once browned, drain the fat well.
  3. This step is optional but I love how it makes all of the meat pieces uniform and small. I run my ground beef through the food processor for a few seconds.
  4. In a slow cooker or your Instant Pot (you’ll still use the slow cooker setting) mix all of the remaining ingredients together with the ground beef on low until heated through and all cheese is melted.

On low, it took less than an hour for everything to melt together. If you need it melted fast, just turn the temperature up to medium or high but make sure you stir more frequently.

Once everything has melted, turn your slow cooker to the keep warm setting and stir it every so often so it doesn’t burn.

This recipe calls for ground beef but you can use any kind of ground meat – ground chicken, ground turkey, ground sausage, or even spicy ground sausage if you’re looking for a little kick to your dip. You could even combine two types of meat if you’d like!

Feel free to add spicier Rotel or a few drops of hot sauce if you want your dip on the spicey side.

We serve this dip with tortilla chips. I love blue corn chips but really whatever flavor you typically prefer will work fine. A little tip I learned is that heating the chips up for a minute or two in the air fryer makes them taste more like the warm chips you might get at a restaurant.

Yes, you can also make this recipe on the stovetop! After browning the meat, just use a medium-sized saucepan to melt the cheeses and blend it all together, stirring often.
