Ingredients:
1.5-2 lbs of Idaho potatoes (I am sure you could use red potatoes or whatever type)
1 whole onion
1 package of Lipton Dry Onion Soup mix
Salt and Pepper
1/4 cup of Olive Oil (or Vegetable oil, whatever you have on hand)
Gallon Size Ziploc Bag
Directions:
Scrub the potatoes and cut any bad parts off, cut them in half and then into bite size pieces, make sure they are all about the same size. Cut the onion into half and then cut into chunks about the same size as potatoes. Put potatoes and onion into the ziploc bag along with the Onion Soup Mix, some salt and pepper, and the olive oil. Seal the bag and shake/mix very well. Pour onto a non-stick cookie sheet and bake in the oven at 350 until tender…approximately 25 minutes.

Love adding onions to food. I really like frying onions with potatoes so I'm sure I would like baked, too. I often add herbs but never Lipton mix. Definitely will have to try.
